Video 004 - Chicken Soup for the Soul

[Filtered away from Subaru Sumeragi:

Have an image of a large metal pot with the bottom burned through and slight blackened. And now have another image of a young man looking at said pot with disdain. Nearby is the charred remains of what looked like kitchen utensils and maybe a cookbook, which seems burned the most as if out of frustration the book was cast into the flames. But the kitchen in the background managed to look quite impeccable despite what was in front of him.]

...who knows how to make soup? Anything to help cure a cold? Also if anyone knows where medicine is available, I want that information too.

Let's see, for udon, if you want to make it last for a while, it would be best to cut the vegetables, create the broth, and just add the noodles for each serving.

If you keep the noodles in the broth, they'll get soggy and lose their nice texture.

Flour, water, and salt for the noodles.

Then for the broth, soy sauce, water, uhm....mirin...katsuboshi,dashi and...something else. I can't remember exactly.

And we can add any vegetable, really.

Mirin? Katsuboshi? Dashi? [What are you saying Takuma? Even if Kamui looked Japanese and had a Japanese name, his world was far from it. Even when he was in Acid Tokyo, the Japanese civilization regressed so much that they were stuck eating the mutated fauna.

The vampire went looking for the other ingredients Takuma mentioned. Opening the cupboards was kind of like walking into uncharted territory.]


Japanese cookbook? Maybe Serenity has one.

[He was already looking around for a pot, cutting board and knives.]

We fill the pot about a little less than two thirds of the pot and set that to boil.

Then we break down the chicken. We just cut it up and used the bones and such for the stock. Then we chop up the vegetables and use some for the stock and some for the actual soup!

That's what we should start on first.

[He twirls a knife over his hand, being skilled with blades.]

You cut the vegetables into large pieces and I'll break down the chicken!

So we're making the stock first, and that consists of parts of the chicken,including the bones and the vegetables. Got it.

[Taking up a knife,he starts to chop the vegetables. He knew he could that much.]

[Takuma easily breaks down the chicken, sectioning off the parts of meat from the leg, breast, and thighs, pulling off the skin and separating the bones and any innards.]

Okay, you see all of these unwanted parts of the chicken? That all goes into the pot along with some of the vegetables that you cut up.

[He picks up his chicken bits and places them in the pot.]

Yes! Then we let it stew for a couple of hours on a lower heat so that all of the flavor can absorb into the water.

Because then the pot will boil over, the water will get all over the sides of the stove and burn. The taste of the broth will be bad and overcooked.

It's like tea.

If you steep a green tea at too high a heat, it will become brown and bitter tasting.

So you have to make sure the broth is cooking low and slow so that it gets the best taste and doesn't create a huge mess.

Well, we can salt and pepper the chicken and put it into the refrigerator until the broth is done. Then all we have left is straining the broth into another pot, throwing away the remains, then doing the final steps of the soup.

[He washes his hands first before touching anything else then gets out the salt and pepper.]

It is, but at the same time it's not too bad.

There are a lot of similar rules and it just takes practice.

It's when you get into gourmet cooking and the art of culinary techniques that it can get complicated. Like flavor profiles and different ways to cut things.

Baking is a chemistry all on its own.

But the basics aren't hard at all.
